The Starters

Jerusalem artichoke soup
with crisp pancetta with pickled jerusalem artichokes & chips & fresh marjoram (can be made vegetarian)

Gravlax
served with quail eggs, marinated beetroots and a cold hollandaise flavored with bacon

Lumpfish roe (add 15,-)
with blini, mayonnaise with safran & sour cream

Tartar of beef a la Ombord
mayonnaise with tarragon, white wine pickled beech mushrooms & parmesan

The Mains

Roasted hake
sautéed cauliflower with thyme & hazelnuts served as a purée & pickled a sauce blanquette flavored with browned butter

Roasted quail
served with giant winter spinach, baked parsnip & a cream of parsnip & a port wine sauce with blackberries

Pork tenderloin it its own forcemeat
with caramelized onions, sautéed enoki mushrooms, cream of mushrooms & a sauce Bordelaise with mushrooms

Steak Béarnaise
– steak of beef tenderloin, crispy fries, salat of the day and sauce béarnaise (add. 70,-)
